either one or both sounds great... i'm sensing a PICNIC kinda theme developing here.. baked beans, shrimp, grilling stuff, onion dip... sausage...hmmm...

not that everything needs to conform to that - diversity ROCKS!

Do you have a Kitchen Aid stand up mixer?  Am trying to decide whether or not I will stuff the sausage in advance.  If you have one, I will do 1/2 of it and do the other half there as i think that it would be fun to stuff sausage (no comments girls) together.  I got the "hog casing" last night - doesn't that just sound disgusting? This will be my first bout with sausage, so it should be interesting.

I am also going to make a carmelized onion dip - it sounded LOVELY - Martha Stewart magazine recipe (hate her, love the recipes).

Steffi - do you want to stuff the sausage?

Yes, I have a kitchen-aid mixer, but i don't have any attachments like a grinder/sausage stuffer - pretty much just the mixing bowls and ice cream maker for it.  Frankly, sausage-stuffing could be REALLY interesting/fun to do!

Laughing at what I'm about to type, but do we need a sausage stuffer type attachment.  Being that I'm a country boy, I could probably get one....

Yes, I have the attachment - just didn't want to have to lug the 9,342 lb kitchenaid with me- have never used it before -  so this should be interesting.
