Any great ideas for a bunch of leftover turkey?

Just roasted a turkey and have lots and lots left over. Any quick and easy ideas for leftover turkey?

Turkey's the toughest leftover for me-- it's the one that most wants to wedge itself in my chest, although I generally narrowly escape!

Mix it with fat free gravy
Turkey salad--Food processor with grapes, 0% sour cream, apples and Splenda
Buy Progresso southwestern veggie soup and dump a LOT of it in there
Mix with spaghetti sauce and top with melted cheese
Toss with low cal barbecue sauce and serve on lettuce as a salad
Toss in crockpot with stock and a few veggies and make stew

Roll ups (see Eggface's  blog). Or lettuce cups (use turkey like you would chicken--just season it a lot and add some moisture to it).

Also, I wanted to share w/ you a sandwich I bought recently (I got rid of the bread). Turkey, dried cranberries, brie cheese and lettuce. I just wrapped everything except the bread in the lettuce. It was pretty yummy!

Well I have a turkey in the fridge thawing now because I want to have it for dinner one night and then use the leftovers for the Turkey Chickpea Chili, I guess it's a knock off of the Panera chili but I've never been to Panera so I don't know, but I love chickpeas and it sounds yummy.  Here's the recipe, but I haven't tried it yet, so can't vouch for it, lol...

4 cups of water
3 cups or so of leftover turkey meat
1/4 cup turkey or chicken broth

1 can of chickpeas
1 can diced tomatoes with green chiles
1 can kidney beans (rinsed)
1 small can tomato paste

2 Tbs olive oil
1 cup diced onions
1 cup diced carrots
1 cup diced celery

3 Tbs chili powder
1 Tbs cumin
1 Tbs modified corn starch (mixed in 1/4 cup water)
1 small lime (cut into quarters squeeze into pot and then throw in)

1 Tbs lime juice concentrate
2 Tbs brown sugar
1/2 tsp onion powder
1/2 tsp garlic powder
salt and pepper

Finger break turkey into small 1/2 inch pieces and shreds.  In a large pot saute onions, carrots, celery in olive oil until onion is transparent.  Add water to pot.  Combine all ingredients and simmer on low covered 2-4 hours, stir every hour.  Makes about 8 bowls.

Ive had this before... dug up a recipe on the internet.
Maybe try this

Turkey Curry Salad

Ingredients:
5 cups cooked turkey, cut into small bite size cubes
1 1/2 cup light or FF mayonnaise
1 tablespoon curry (or more to taste)
1 cup celery (diced small)
2 medium apples, Red and Golden Delicious (diced small)
2 tablespoons Splenda
1/2 cup Golden Raisens
1/3 cup yellow onion (diced onion)
1 tablespoon prepared Mustard
