Banana Pancakes become Banana Muffins

Remember yesterday when I was raving about the banana pancakes I made?  Well they were SO good that I had to make them again this morning.  But I knew I couldn't eat a whole batch so I tried an experiment of making the other half of the batter into muffins.  And they turned out delicious and so cute!

Sure, c'mon over and I'll make you some.  

I couldn't remember the ingredients in the recipe you told me about the other day... just that it had a banana and nuts - so I  winged it.  So now I'm curious to know what your recipe is so I can see how close I came with my own concoction.

Well I'm using Carbalose flour instead of CQ baking mix so my recipe is a bit involved:

1/2 c. Carbalose flour
1/4 tsp salt
4 tbsp Blue Bonnet Light
1 tsp baking powder
1 egg
1/2 c. skim milk
2 tbsp Splenda
1 mashed, very ripe banana
1/4 c. chopped walnuts
a dash of cinnamon
a dash of  nutmeg

Makes 4 very large pancakes or 8 smaller ones. I usually make big ones and just eat two.

for the topping I mix

2 tbsp Neufchatel cheese
2 tsp Splenda

Nuke in the microwave

 oh yeah, I forgot about the cream cheese topping.  dang it!  I just used Sugar Free Mrs. Butterworth.

Hey Pam,

Is the CarbQuick really worth the 17.99 or can I use another low-carb pancake mix.  I saw one that used to be the Atkins low carb pancake mix.  What else do you use?

Looks sooo good.  I want to find things that will be good for me and my 11 year old who will be trying to follow along in my eating patterns to lose quite a bit of weight.  So something tasty like this is appealing.

I'm not Pam but to me it's worth it. The stuff only has 3 net grams of carbs per serving. You can't beat that. It can be interesting to work with tho. It has a slightly bitter aftertaste (which can be covered) and there is a LOT of fiber in it (so you can't eat that much of it) but I love it. I can make pancakes and biscuits guilt free.

My kids love CQ as well.

I've never tried the Atkins mix.  Nikki used the carblous flour as she mentions above.  I don't know of any other brands.  And yes, the CQ is worth $17, in my opinion.  I only cook for myself so I only ever use 1/3c of the mix at a time -- which is 42 servings per box, so only 43-cents per serving. 

Be careful putting your 11 year old on the same WLS diet you're on though.  Definitely consult your pediatrician about the nutrient balance he needs -- which may not be high protein, low carb for a growing kid.

Thanks a bunch.  My 11 year old daughter is fast following after my footsteps and she definately needs to pull away from the carbs and the fats.  Her diet will be like mine pretty much...high in quality proteins, lots of vegetables (non starchy), and a small amount of whole grains.  Metabolically this is what she's designed for.  She got it naturally.  She wont be indulging in the shakes with me, but she and I will pretty much be on the same page in many aspects.

Good catch Pam! My kids eat a diet much higher in complex carbs and healthy fats than mine but they do enjoy some of my wls concoctions, including CQ baking and my youngest LOVES to split a Click Frapp with me.
