I usually get a veggie omelet at places like Denny's and Bob Evans. I don't eat meat so that works best for me.
Denny's has a veggie burger too which is OK but I don't love them.
When you get further out, if you are really in the mood for pancakes, they have sugar free syrup, or at least the one by me does. I would not get them often - I think I've had them once since my surgery. I got an order of two, ate one myself, gave the other to my partner.

I have not been to Denny's since my surgery, but I read this post from Bariatric Foodie about Denny's. It has lots of great ideas of what to get there. I hope this helps.
