V8 Juice

I'm almost 7 weeks out.  Concerned that I get hardly any veggies in (maybe one to two bites a day) I went and bought some V8 juice, the little 6 oz cans.  I love all things tomato:  soup, marinara, pizza sauce, etc.  This seems a good choice for me.  Anyone else "using" V8?

Yes, I drink V8 occasionally.  I love it, but it is kind of expensive AND has a lot of sodium, so I limit it.

They have a low sodium version and it's delish.  80mg sodium.  Not bad.

Yeah, they do have that. I forget about it because, unfortunately, I don't like the low sodium version much.

 It's high in carbs.

While it might be beneficial as a soup -- beware using it as a drink.

Carbs are 7 g, so still single digits.  Aren't vegetables carbs by definition?  Funny too, the 5.5 oz can also has 1 g protein.  Wonder which vegetable contributes that?  My guess is the carrots or beets.

I use the V8 spash to mix with my Nectar Carribean Cooler.  V8 spash is sweet, and I'm craving something sour and slightly salty.  Does the trick for me.

I buy the low sodium V8 and then doctor it up with tabasco sauce till it is spicy enough for me.  I drink one 6 oz can a day.  I also use Diet V8 Splash strawberry banana flavor.  But i do not use both on the same day.   i was told by my Registered Dietician to use them for the veggie goodness but not more than 1 a day.

I too bought the low sodium version.  Great idea about the tabassco.  I could stand some spicy.  The cans are sorta expensive, so I have only been having one a day anyhow. 

I have used the V8 spash occasionally with my Nectar Carribean Cooler protein.  Do the spash versions actually have vegetables in them?  I thought they were fruit juice based.  Actually, I was thinking the V8 spash was more like Crystal light, it only has 10 calories in 8 oz.  There can't be much of substance in it.

The V8 Splash has Carrot Juice instead of tomato juice.   and  Each 8 oz serving provides:

\Vitamin A: 50% of the Daily Value of vitamin A
Vitamin C: 100% of the Daily Value of vitamin C
Vitamin E: 20% of the Daily Value of vitamin E

The V8 Fusion dependes on which flavor you get which fruits and veggies are in it  but each 8 oz serving of Fusion gives you a full serving of veggies and a full serving of fruit. 

Strawberry Banana contains the juice of 10 vegetables and fruits: sweet potatoes, carrots, tomatoes, beets, white grapes, oranges, apples, strawberries, bananas, banana puree.

Homemade Tomato Juice Recipe

Some tomatoes are sweeter than others, depending on their ripeness and the variety of tomato. Use the ripest tomatoes you can. Added sugar will balance the natural acidity of the tomatoes, use more or less to taste. Tabasco hot sauce is also to taste, depending on your desired level of spiciness.

What to do with the leftover tomato pulp? Try frying it up with some eggs for a tasty scramble.

Ingredients

  • 3 pounds very ripe garden tomatoes, cored, roughly chopped
  • 1 1/4 cups chopped celery with leaves
  • 1/3 cup chopped onion
  • 2 Tbsp sugar subsitute (to taste)
  • 1 teaspoon salt
  • Pinch black pepper
  • A couple shakes of Tabasco sauce, about 6-8 drops (to taste)

Method

1 Put all ingredients into a large non-reactive pot (use stainless steel, not aluminum). Bring to a simmer and cook, uncovered, until mixture is completely soupy, about 25 minutes.
