On the up side...homemade greek yogurt!

Equipment:

Large Crock Pot
Strainer
Large Bowl
Coffee Filters or Cheese Cloth
Mixing Spoon or whisk
Measuring Cup
Electric Mixer
2 Large Clean Bath Towels

Ingredients:

8 Cups Skim Milk
1 Cup plain non fat yogurt
1 packet of unflavored gelatin
1/3 Cup Dry Milk

Put your Crock Pot on LOW
Add the milk to the Crock Pot
Cover and let heat for 2.5 hours
Shut the Crock Pot off and let sit for 3 hours with the lid still on
Mix gelatin, yogurt, and 2 cups of the crock pot milk together in a bowl
Add mixture back to crock pot and mix well
Put lid back on Crock Pot
Surround and completely cover Crock Pot with Towels
Let this set for atleast 8 hours (I let it sit overnight)
Put Strainer in the Bowl
Line the Strainer with Cheese Cloth or Coffee Filters
Pour entire contents of Crock Pot into the Strainer
Let it strain at room temperature for 2 hours
Pour the whey (yellowish liquid) from the bowl into another container if you would like to use it to bake with later or just pour it down the drain or in the garbage (whey freezes well if you won't be baking with it for a while.  I hear it's great as a liquid substitute in breads, pancakes, etc.)
Put the Strainer back in the bowl and set entire thing in the fridge.
Let it strain another 8 to 10 hours
Pour the whey out of the bowl again
Pour the yogurt from the strainer into the bowl
Add the Dry Milk
Mix with an electric mixer for about 2 to 3 minutes

Add your favorite Torani syrup, fresh fruit, or IMITATION extracts with sweetener for flavor.

NOTE:  Do not use REAL extracts...these may curdle your yogurt

Makes 4 cups of Greek Yogurt

1 Cup serving size
121 Calories
14.5 Sugar Carbs (but these are from milk and are OK)
16 Grams of Protien

Total cost of ingredients for me:  approx. $2.50 as compared to $7 for the same amount of greek from the store!  You only do about 15 minutes of actual labor...the rest is just waiting time!
