FISH

So I finally agreed with my hubby that I need to TRY to add fish to my diet. I HATE FISH! And I have a SHELL FISH ALLERGY!!! So I ahve always been rather careful of what I eat fishwise anyway..... growing up it was always fried catfish and sometimes dad would make trout or bass.

Well my hubby bought some different types of fish for me to try. Tonights menu..... Swordfish and Halibut. He cooked our whole meal seeing as I am totally clueless when it comes to fish. He baked both and seasoned them differently.

Not a food I would like to make a steady meal of but if I was forced to choose between the two I would take swordfish.

Anyone have any good fish ideas? Opinions?

Call me uncreative, but i LOVE LOVE LOVE baked salmon with dijon mustard, garlic, olive oil, and a little lemon juice.  I pop it in the oven for about 15 minutes and it comes out so moist and tasty.  I can't wait to eat it now that i'm post op  :)

 I'm a fried fish kinda girl and always resisted the baked/grilled fish thing because I just couldn't believe it would taste good.  Well, since surgery I started experimenting with Tilapia (a flaky white fish) and Vidalia Onion salad dressing.  I just poured a good bit over the fish...a little butter or olive oil (or not) and I add a dash of sea salt and crushed pepper ( I like spice) or cayenne pepper.  DELISH.

I've tried it with a couple of salad dresssings like the Mandarin Sesame with salmon.  VERY GOOD!  You just gotta add spice to your liking and give it a try.  You'll be surprised.  I've even done the Tilapia with a peanut sauce.  I liked it...pan seared and some Thai sauce, garlic, etc. and it really was good...and different.

Tilapia is a favorite of mine...not too fishy tasting OR smelling....I baked in oven for about 15 minutes with some lemon olive oil salt and pepper. Or I will pour medium salsa over it and bake for a different taste Eat it at least twice a week......loaded with protein and oh so yummy!

Salmon baked with Garlic Roasted Pepper or Lemon Pepper....

It's good and takes no more than 10-20 minutes. I ate fish too ,and it's the only one I will eat.

Eating Well After WLS (cookbook) has a super yummy salmon recipe that if fabulously easy...

It included dill, which I purchased  fresh dill in the Safeway that comes in the tube and made a paste. That and some other ingredients. It sounds cheesy, but it made whipping up the marinade sooooo easy. A nice change from the lemon and oranges that my mom used to bake with salmon, or mixing it with tartar sauce.

I baked mine, but you could probably grill it too since it is bbq season!

I don't have the recipe with me, but if you like Salmon and Dill.... message me and I will look at it when I get home.

So far have only tired Tilapia (lemon pepper and butter n garlic) and I LOVED it! There are a few more I would like to try, orange roughy being one of them and salmon too. I also like tuna.

 Swordfish and halibut are more firm textured fish.  You may like lighter texture fish better like tilapia, orange roughy, perch, etc.  A simple thing I do with any of those is that I saute some chopped garlic in olive oil and lemon juice so the flavors will infuse better.  I salt and pepper the fish filets and pour the sauce over them.  I bake at about 400 for 10-15 minutes until they flake easily with a fork.  It is one of my regular meals I eat.  Salmon and tuna are a more oily fish, and I cannot handle them right now (my pouch doesn't care for them), but they are good too.  I like to use sites like eatingwell.com to get new recipes.  If you put in the type of fish in the search box, it comes up with all sorts of healthy recipes to use.

I haven't tried it yet, but I just got an email with a link to this fabulous recipe in it. Looked so good I bookmarked it. It's halibut (I plan to use talapia) with lemon pepper and squash. You wrap it in a foil pouch and put it on the grill. Sounds yummy!

both of those are rather thick dense fish..I'd try some tilipia or perch like others mentioned with simple lemon pepper and onions or old bay....
Babygirl got her surgery March 3rd...     She's from 339 to 200 as of 6/14/2012.. SOO proud of my bigbabygirl
