My shelled edamame results w/ pics...

The picture on the left is a quinoa and edamame with feta cheese, dried cranberries, cilantro and a "dressing" of olive oil, a bit of splenda (fan of sweetish), lime juice, sea salt, and red pepper flakes.  It was an adaptation of a recipe that called for brown rice and also had kalamata olives, but I didn't have any. Had I had the olives, I could see doing a simple greek salad dressing and adding a bit of lime juice and the red pepper for some kick. I actually really like it. I love the savory and sweet. My 5 year old ate it the first night and loved it. Today when she ate it she said it tasted like, "Stinkbugs." Not the most glowing review! I ate it warmish yesterday and cold today. I prefer it cold. Great side!

The second picture is an adaptation (not a big "follow-the-recipe-to-a-tee" kind of gal) of a summer salad one of our nice OHers shared. Mine has edamame, tomatoes, cucumbers, a bit of vidalia onion, cilantro and a dressing of rice wine vinegar, a bit of olive oil and a bit of sesame oil (loved the flavor that gave with the rice wine vinegar), and again a bit of splenda. I LOVE this salad. Cool, fresh--summer. I could also see adding some nice fresh mango or pinapple, chopping it up more fine and creating something of a fruited salsa.

Just thought I'd share. I have a couple more recipes planned.

Stinkbug Salad--that is exactly what I am calling it in my recipe file. When she said it tasted like stinkbug I said, "So you've eaten stinkbug?" Kids are so darn funny.

The other one is really good! Enjoy!

 Oh wow they both look AMAZING!  I LOVE edamame!  I am going to have to write these down for after my surgery!!!!  I know my husband and daughter would love these too!  Thanks!
