CAN you have bread? Yes
SHOULD you have bread? Probably not, but depends on your nutritionist advice.
I'm putting a couple recipes here for you..
Chicken & Broccoli Bake:
1/2 lb chicken, cooked and cubed
10-12 ounces brocolli, cooked and drained
1 cup cheddar cheese
soy sauce
Combine all in a casserole dish and bake - it's surprisingly good!
Stuffed Turkey Burgers:
1/2 lb ground turkey
1 jalapeno, seeded and diced finely (or canned)
2 ounces blue cheese
2 slices swiss cheese
Combine the turkey with the jalapeno and blue cheese, make 2 burger patties and cook them and top with swiss cheese.
Crockpot Carnitas:
2lb boneless pork roast (shoulder or butt), cut into bite size strips
1/2 c water
2 minced cloves garlic or 2 tsp. garlic powder
1 cup chopped onion
1 tsp salt
1/2 tsp each: black pepper; cumin; oregano; lemon pepper
1/4 tsp cayenne
Combine ingredients in crockpot. Cook on high 1 hour, then low 8 hours. Remove pork with slotted spoon. Pour liquid into a nonstick skillet and boil down to about 1/2 c. Add pork and saute until browned.
KOREAN MEATBALLS (Crock Pot)
2 pounds ground beef
1/3 cup onion, minced, 1 3/4 ounces
2 eggs
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon garlic
Mix all ingredients well with your hands. Shape in small balls (about 1-inch diameter) and place on an ungreased rimmed baking sheet. Bake at 425º for about 10-15 minutes, until meat is cooked through, but still tender. Rinse in a colander to remove any egg that has leaked out. Combine with marinade and simmer in slow cooker about 3-4 hours, stirring occasionally, or simmer on lowest setting on stove about an hour or so.
MARINADE
1/2 cup plus 2 tablespoons soy sauce
1/2 cup plus 2 tablespoons water
1/2 cup granulated Splenda
1/2 teaspoon pepper
1 tablespoon garlic, minced
2 tablespoon sesame oil
1/4 teaspoon orange extract (optional)
1/4 cup green onions, chopped
Mix all ingredients in a small bowl.
I do a lot with really, really thin chicken cutlets and roll various things in them - broccoli with cheese, ham and cheese, some fresh herbs, asparagus and cheese. Very versatile.
