1 pound ground Chicken, Turkey, or 1 pound cut up Chicken Breast
1 yellow onion diced
1 bundle of Cilantro diced, just the leaves.
1 package of White Chicken Chili seasoning pack (McCormick)
2 – 15oz cans Great Northern beans – any brand
2 – 14.5oz cans Del Monte Diced tomatoes – Zesty Mild Green Chilies
1 - 7oz can of diced green Chile peppers
A dollop of Sour Cream - optional
Sprinkle with Cheese - optional
Cook selected meat with the diced onion until meat is cooked through. Add White Chicken Chili seasoning package to meat and onion, stir. Then add the rest of the ingredients and let simmer until flavors developed and beans are tender.
Did you see my reply to your carb swaps post last week? I am looking for ideas to sub for crackers and chips. I was thinking a dehydrating some root veggies or cucumbers, then finishing in the over to get a bit crisp. I was also thinking of making flax seed crackers, but not sure if we can really digest these. Have you ever tried any of these or have any other ideas?

Some I like:
Wasa whole grain (low cal, good fiber, good overall stats)
Ak-Mak
Fiber One crackers
But more often than not I get Pop Rice. Google Cocopop. It is sort of like a rice cake but thinner, crispier and they are like 16 calories for a huge one. I get mine at the Amish and eat everything on them: tuna, PB, everything.

Oh and thanks girls for the chili recipes..i am not much of a chili person but with chicken it looks so good.
i am forever hungry for chips and salsa...baked chips are like 2 g of fat, no sugar and 2 g of protein..this will someday be a snack for me. lol oh this is a post op craving for me btw not something i normally ate before. ha.
I, too, have been feeling like crunchy stuff lately, and don't want to fall back into old habits! Here is a good starter recipe for flax crackers that is plain but you can add whatever flavors you want to them:
