What's For Dinner?
I am so proud of myself. I am not a cook. I don't like to cook. I make very easy things and freeze the leftovers so I don't have to cook often.
Unfortunately, in spite of having about a dozen different choices in my freezer I get in those spaces where nothing sounds good. And what does sound good is too hard to make.
For some reason I have been thinking about this dinner I used to make my kids. I called it hamburger pie. Basically I just made a meatloaf and cooked it and then topped it with mashed potatoes and shredded cheese. That sounded good but I actually like mashed cauliflower better then mashed potatoes so I made it using mashed cauliflower. It came out great and tasted as good as I remembered.

mmm Lady Tazz, that looks yummy. I might have to give that one a try. Tonight I made some super yummy nachos. cut a carb balance tortilla into wedges. spritzed a little olive oil on it and sprinkled it with garlic powder. bake @ 400. makes a really crispy yummy tortilla chips. spread those with hummus and topped them with seasoned ground turkey, jalepenos and low fat grated cheese. they tasted great and have 27 grams of protein.
Leftover bean and sausage stuff for me. It's a recipe I made up and I don't reallly have a name for it. It has kidney beans, veggie Italian sausages (cut up), onion, red pepper, diced tomatoes, garlic and this sweet chili sauce that is just so yummy. I always make a big pot when I cook this because I love having it for leftovers.
