thanksgiving...christmas...
i love pumpkin pie and am not sure if i am a dumper but would like to try making it with splenda this year. Anyone ever made pumpkin pie this way? i was thinking of getting a pie crust too and just rolling it really thin or using pyllo because i think it is fat free. With the holidays coming up this would be a nice treat but would need to share because i can't eat a whole pie myself.. lol i did recently find a recipe for pumpkin muffins...you use a SF yellow cake mix, and pumpkin and something else...i would have to look up the recipe but it sounded good. thanks for any help...
I'm doing "pumpkin cheesecake" with Greek yogurt. In a sugar free graham cracker crust, if I can find one.

Someone posted this link for a sugar free graham cracker crust a while ago. I am thinking about ordering one. Here is the link: http://www.fifty50foods.com/piecrust.html
I'm going to do something like this:
32 oz container of plain Greek yogurt mixed with about one cup pumpkin puree, one package sugar free cheesecake flavored pudding mix, Splenda to taste and a couple tablespoons of sugar free caramel syrup (I think it would work fine with the caramel syrup, iif you don't have that.
I'll spoon that into the graham cracker crust, top it with Cool Whip Free (fat free, low in sugar) and sprinkle with cinnamon and nutmeg.
I've been eating this for a a while now, minus the graham cracker crust. It is delicious.
