How much damage?
I'm wondering, how much damage can we do to our stomachs in a week or two? I don't normally overeat. Normally I eat small portions. somewhere in between 1/4 and 1/2 cup. But... a few days before Thanksgiving I began eating more than I should have been. At one point, I decided to measure, and I was eating 1 1/2 cups to 2 cups. So how much damage could I have caused? I am getting back to my healthy habits starting in the morning, but could I have caused damage to my pouch or stoma?

I really don't know. I think probably not but it sounds like a question for your surgeon.

It is VERY unlikely that you did any "damage" to your pouch, and unless you were eating to the point that you were uncomfortably full (and thereby putting excessive pressure on the stoma), it is unlikely that you "damaged" your stoma (I assume by "damage" you mean stretching, since I am unaware of any type of real damage that one can do to either the pouch or stoma with food).
Your pouch and stoma really are not easily stretched (although the stoma will stretch more easily than the pouch with long-term overeating since it is essentially just tissue and the pouch is muscle).
