My surgery was on Nov 21, 2011. I can eat anything I want now. I just have to puree it or it has to be "fork tender". As for salads doctor said I needed to be at least three months because lettuce is so hard to digest. Fruit must be skinned right now and pureed. Bread must be toasted.

My surgery was 10/28, so we are pretty close in our progress. I know what you mean about salad and fruit. I want a salad SOOO freaking bad. According to my surgical plan I have to wait till the 4 month mark. I can tho eat fruit. As long as it's soft and peeled, I'm good
I eat the fruit cups that have no sugar added. It's not the same as peeling a fresh orange and enjoying the hell out of it lol.. but it will do for now.

I was eating fruit (carefully because I was afraid of the sugar contant) and salad 30 days out. Bread has a very heavy feeling to me so I still dont really do bread and I am around 6 months out. I don't like eating rice either because it doesn't have much realy nutritional value. Honestly if I am curious I try it and funny enough most of the things Im not supposed to be eating I dont like anymore, or dont sit very well in the pouch.
It all depends on your surgeons protocol and your tolerances. My surgeon has you pretty much back to normal foods in like 4 months. Now when you do get "normal" foods back you need to make sure you are making the right choices. Pasta, Breads and Rice rarely enter my diet unless I am doing major workouts of 2+ hours. Fruits I have fruit twice a day on average but what fruits I have change based on my activity Berries are a standard for me along with Half a banana. Before a 12 mile or longer run I have been known to down 2 bananas in my protein shake.
Really Chicken, Fish, Pork, Beef will become your main foods as they are your protein source. Typical meal for me is 4oz of protein and 1/4 - 1/3 cup of veg. You will find that you tolerate some meats easier than others for me Pork is my go to meat. Steaks I can't do unless it is a quality cut New York or Filet.
You will get it figured out just follow you surgeons plan and it will be all good. Also check out the mens forum for more guy like opinions.
One last thing your in the end your activity level will dictate what and how much you will want to eat. So you might want to check out the exercise and Fitness Forums.
