Ingredients
3/4 cup Splenda
1/4 tsp. cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
pinch salt
2 1/4 cups egg white product (egg beaters)
3 1/3 cups fat free skim milk
1/2 teaspoon vanilla extract
1/2 teaspoon imitation almond - optional
Directions
1. Combine Splenda together with allspice, cinnamon and nutmeg in a large bowl. Add egg whites to Splenda and beat on high speed with an electric mixer for 5 minutes.
2. Pour one-cup skim milk into a saucepan and heat over medium, stirring constantly until steaming. Gradually stir half of the hot milk into the beaten egg and sugar mixture.
3. Stirring, pour the hot milk and egg mixture back into the remaining milk in the saucepan. Return to medium heat and cook 5 - 8 minutes, stirring constantly until mixture is steaming once again and slightly thickened so that it thinly coats the back of a spoon. Do not let mixture boil. Stir in vanilla and or almond extract and remove from heat.
4. Stirring frequently, allow mixture to cool 5 minutes before blending with remaining milk. Cover and refrigerate until well chilled.
