Minus the tortillas (I have never found a decent low carb tortilla... they all have a cardboard taste and texture to me, so I don't eat any tortillas), it does sound yummy. Wonder where one finds spicy black bean dip...?

Sounds really yummy! I used to have enchiladas all the time pre-surgery and I really miss them. It's a good thing I don't currently eat much salty food because WOW did you see the sodium per serving? Nevertheless, that's a lotta protein for so few calories!
