That's the one casserole I haven't used a measuring scoop on. When I input it into MyFitnessPal I used 12 servings (for calculating protein and calorie needs). So that's what I serve myself. I make it in a 13 x 9 pan and divide it up into 12 servings. I guesstimate it's about a half cup. But I usually supplement it with additional veggies on the side or a side salad. And because of the dense-ness of the casserole, it is really filling.

It is dense and filling, and lasts me for hours... it just freaks me out that it IS so dense and I can still eat a cup plus peppers w/ cheese

I LOVE this recipe.  However, I want to eat entirely too much of it.  I'm only 8 months out and although I limit myself to a cup, I feel like I can easily eat more. Soccer ball indeed!!

So, what I've done is substituted the ground beef for turkey medallions.  My grocery store has turkey breast cutlets, so I bought them and cut them up into quarter or half-dollar sized pieces.  Then I put a little salt and pepper on them and cooked them in a frying pan with a little oil.   Take them out and keep warm.  Then I made the rest of the taco casserole and mixed in the cooked turkey last.  Poured the entire mixture into the baking pan, covered with refried beans and cheese, baked as usual.

The turkey  medallions require me to chew more, which makes me eat slower, and makes this very yummy dish less like a slider food for me.

 Christina- do you have it saved on myfitnesspal?  Everytime I eat it I individually add each part in and I guesstimate the amounts.  I'd love ot knwo what you added it as so I can find it!
