making omletes help please...

You don't have to worry about the top cooking until firm because when you fold it the bottom will be hot enough to finish cooking. Secondly, when you pour the beaten eggs and a little milk into the hot skillet, wait a few seconds and using a spatula, lift up the edges and let the raw eggs run to the bottom. Do this a couple of times, add cheese and presauteed veggies/meat, loosen the bottom and let it slide on the plate, folding as it slides out of the pan. It is very easy to over cook eggs so you can always put them in the oven to finish if you need to.
Breakfast is my favorite meal and of course I fix frittatas and omelets all the time for B & Ber's.

Heat up your pan to medium heat, add everything, turn to low heat with a lid and basically let them steam.  Delish and fluffy everytime!!!
