This is believed to be an eating disorder linked to anorexia or at the very least, disordered eating.

Crazy is probably not a good word to use, but if you find you are doing it more and more, I would consider consulting a therapist to get a handle on it before it becomes more disordered.

Dont get me wrong we are eating its just we just want the taste of something but dont want to get sick if we eat it.

I eat three meals a day and a snack sometimes. I dont think they or myself are saying that we dont eat AT ALL.....

If you are going to get sick on watermelon, it would be from the sugar in the juice not from the fiber.  (Watermelon is higher in sugar than some other fruits, which is why some surgeons do not allow it very early out... NOT because of that small amount of fiber.)

If you can suck down the juice and then spit the small amount of fiber without getting sick, you can just eat the whole thing without getting sick.

Crazy, no.  But that is a symptom of an eating disorder.

Now, having one symptom of a disorder does not mean you have the disorder.  But it's something to keep in mind.

Why  not eat a small amount of the watermelon instead?

Make watermelon popcicles, blend the water melon, or if you have a juicer you can juice it, and use one of those homemade popcicle dishes, or you could make watermelon ice cubes and suck on those.

How would that help?  The problem is NOT with eating the fiber in the watermelon early out... the problem is tha****er,elon is high in sugar and might make some people sick.  If it will make someone sick to eat a piece of it, it will make them sick to eat frozen watermelon juice.
