I love mine with spagetti squash. Now-a-days pasta tastes so bland and pasty.

Or mix it with ricotta cheese.

You can also make noodles with zucchini or yellow squash using a vegetable peeler and lightly cook till tender.  You can also saute onions and serve over onions.  You can also put it on a big spoon of ricotta cheese and bake until warm.  Also, put on top of a crepe or an omelet.

Good luck :)

I usually skip the pasta all together and eat it chili style. Pasta has no taste. It's basically just a vehicle to get sauce to your mouth. Cut out the middle man!!!

But if you must have something, spaghetti squash works well.

My late mother taught me the most awesomest spaghetti sauce recipe that I made WLS friendly. I use ground turkey, turkey Italian sausage (I like the spicy kind), fresh onions, peppers, mushrooms, black olives. Then I use cheapie spaghetti sauce with an extra tablespoon of tomato paste. So thick and meaty. NOM!

You might want to try cooking a small amount of quinoa.  Add sauce and meat on top.  Be careful, read labels on sauce. Check the sugar levels. DAVE

I frequently make "lasagna" without the noodles... just layers of meat/sauce and cheese. I use slices of provolone as the pasta, then put ricotta or mozzarella cheese and the meat sauce on top of that. Using sliced cheese helps give a firmer texture to the whole thing (still not as firm as with pasta, of course, but much better than just using shredded cheese).
