Cleared for tortillas!

 You have no idea how happy this makes me! LOL I knew I could have them before, but I didn't. My dietician gave me the OK for some other food ideas, too. On to quesadillas!

here's my personal quesadilla recipe. If I can't enjoy yummy food yet, I might as well share it with others :P

-2 soft tortillas
-jalapenos (slices, amount your choice)
-grilled chicken (pieces, amount your choice)
-shredded low fat cheese. (amount determined by size of tortillas. usually about 1-2 cups)


-lay each tortilla flat on a pan.
-completely cover each tortilla with cheese
-add chicken onto one tortilla and jalapenos on the other
-bake on 400 for 8-10 (check on time, sometimes certain shells overcook easily)
-flip one onto the other like a sandwich
-cut into 4's and enjoy

I've made mine on the stovetop with either a griddle pan or non-stick pan. Works pretty well as long as I don't overload it. LOL

I am 6 months post op and I cannot even think about eating a tortilla! I wish that I could, that way I could eat the spinache wrap chicken sandwiches that I used to love. I have tried to eat the tortillas but they will not go down.

Tortillas (bread and pasta too) are very rough for me, so I try to avoid them.  I have sandwiches and tacos on romaine lettuce leaves. 

For pasta I use shiritake noodles or julienned/sauteed zucchini squash - yummy - and the squash is way better for you than any pasta.

 I've tried tortillas 3 times so far.  Once I tried corn tortillas and that went fine.  The other 2 times I tried flour tortillas and I just cannot do them.  They kill me.  Ah well, I can live with corn tortillas.

I made tuna melts on whole wheat mission tortillas last week. Eggs still hate me so I am thinking of remaking my tuna salad w/o the lil yellow devils lol.

Just toss a tortilla in a skillet (or on a griddle)
layer w/shredded cheese
dollop of tuna salad
a little more cheese (as a glue)
then top with another tortilla.

This would have been 2 meals for me if the eggs hadn't upset my stomach. When you want the other half just toss it in a skillet for a min to reheat or put in a toaster oven.

I can't eat tortillas. I just can't. It feels like it gets stuck every time.Even if I chew, chew, chew!

Quesadillas have been a must for me. I actually went and bought a George foreman quesadilla maker!!!! Handy little appliance!! So many things you can add to a quesadilla. I use cheese, pre-packaged southwestern chicken (Oscar Meyer), black beans or Refried beans (or both) and I use grilled onions and red peppers. Some salsa and ff sour cream. Yummy. Now I know what is for dinner tomorrow
