Do you like cranberries?

I love 'em, but anything "cranberry" that you buy in the store is usually so high in sugar (except the Ocean Spray diet and powdered drink mixes).  I found a yummy solution that works for me.

I bought the whole fresh cranberries in the fruit/veggie section, and boiled them in 1 cup of water as per directions. I omitted the sugar. When they were cool, I added liquid splenda to sweeten them, and put them in the fridge.

In the morning, when I'm making my protein smoothie, I add a couple of tablespoons of cranberries in the blender with the ususal stuff. I use greek yogurt (0% fat, plain), a few strawberries and blueberries, a little ice and a scoop of vanilla protein powder.

It is SO good, I'm hoping the cranberries stay around for most of the year!

Anyone have any other healthy cranberry recipies to share??

You can also freeze fresh cranberries. Just remember to use them up. ;)

I wonder if they would taste good simply eaten as a frozen snack, or in some kind of frozen yogurt dessert. Hmmm, now you've got me thinking! :)

Thanks for the tip!  I love cranberries and I would have never  thought of using the liquid splenda!  Do you use that in a lot of things?  Any tips for how to use it otherwise?

I have used the liquid splenda for years because the powdered form contains fillers/extenders (like maltodextrin) that are metabolized as sugar. I use it anywhere I would use regular splenda, like in flourless bran muffins, flourless pumpkin/sweet potato "pie" and of course in coffee. If you keep in in the fridge, it doesn't crystalize around the dropper top as much (but it does not require refrigeration, and I always carry a small bottle in my purse.) This is where I order mine from, but I do think that it's becoming more available in grocery and chain stores now (although not in this brand): http://sweetzfree.com/

Yes, it probably was Ocean Spray. And it contains only 5 calories per 8 oz serving and comes in regular cranberry flavor as well as cran-grape, cran-lime, etc. I get mine at Publix, my local grocery store.

stock up during Thanksgiving and Christmas season and then freeze them because you will not be able to find them after the new year.  My entire family are cranberry crazy so we have been doing this form many years and even when we try to conserve we usually run out by summer.  Just cant stay out of them.  My great nephew eats them raw right out of the bag, ha, who needs sweetener.

I love the suggestion of freezing them! Great idea, and I will do this, thank you! Your nephew must really love sour stuff, but I'm gonna give this a try...

My daughter and I were JUST TALKING about making cranberry sauce for Thanksgiving using Stevia. I think I'll experiment ahead of time to make sure it works OK.
