Eggplant is it a soft food

Hi I am 3weeks out of surgery and wondering if I thinly slice some eggplant and roast it do you think it will be soft enough?

i doubt it. it might be to fiberous. i would stick to eggs and cream of wheat and mashed potatoes. stuff like that. i had a hard time eating eggs myself.....

I did not eat any veggies for almost 3 months. There is just not enough space to waste on non protein foods. take it slow and chew chew chew.
