Stuffed peppers

Get everyone,  what is your stance on stuffed peppers?  I know they have a lot of protien in them, but do you all think they are too "fatty" for us?  Just looking for feedback, thanks ;)

I guess it depends on how you make them. I use angus beef to makemine and the one I eat i dont dip in the egg batter to fry it. I'll make everyone elses the normal way. (I'm from El Salvador, so I dont know if that the way you make it or not)

The way I make mine is basically a bell pepper baked with meatloaf inside - low carb/high protein and very filling - I say go for it!

Check out Eggface's blog for unstuffed peppers, no rice. I love her burrito stuffed peppers! :)

 

 

246 in Dec 2008 before banded 1/28/09 at 215 lbs, band crapped 9/09 at 170 lbs and struggled with it and regained to 203 revised to bypass on 8/1/11 and am very happy.

Stuff them with ground turkey instead of beef, you'll lose a lot of the fat and get good protein. I add onions, garlic and no-salt spice mix like Mrs. Dash, cover with a low sodium tomato sauce with those sames spices and black pepper on top.

The recipe was printed in a newsletter from my surgeon's office.  I've made them with ground turkey and Laura's Lean Ground Beef.  They are a favorite with the non-ops at my house too.  I would love to try them with ground lamb.   A big bonus is that they are cooked in the crock pot.  Easy to make up the night before.  I stick mine in a plastic storage container overnight, then put them in crock pot with the sauce in the morning before taking off for the day.

I like to use those multi-colored mini peppers. The higher pepper:meat ratio keeps the stuffing much moister, they look really pretty, freeze well, cook faster and have nice portion control.

I would have to agree with other posters. Stuffed peppers are a great source of protein if you use lean meat!  I have made many variations.  One I like to do is a Mexican stuffed pepper.  Mix ground chicken, turkey or lean ground beef with taco seasoning, black beans, red onions, and you can add corn if you like (not low carb I realize).  Top with salsa and a little bit of cheese or light sour cream when you eat them.  They are divine!
