Time out from surgery: a little over five months.

B: Little over half a Boca burger patty with some salsa and cheese on it.

L: leftover chicken muffin from last night.

D: probably a cheese omelet. Going to eat with friends this evening....that will probably be my choice.

snack 1: sugar free homemade peanut butter cookie.

snack 2: light and fit Greek yogurt. Probably strawberry and banana....I think I've decided that's my favorite.

on track with water and vitamins...not to mention my usual coffee indulgence.

Hi Topher!  Long time no see :)  What's a chicken muffin?  Sounds intriguing lol.  Also, a sugar free peanut butter cookie sounds pretty tasty too!

Hey, DC!

Yeah...I have been doing a lot more lurking than posting lately...either that, or if I don't really have anything new or interesting, I usually don't chime in.  LOL.

I know you love the eggface...the chicken muffin is kinda like the egg bites she makes.  I had some leftover rotisserie chicken, so I pulled the rest of the meat off, then diced the meat really small with kitchen scissors.  Added some diced celery and onion, a couple of eggs, a handful of cheese, seasoning...and then baked them in a muffin pan for 30 or so minutes. They ended up being REALLY delcious...and kinda had a Chicken and Dressing taste to it, without the guilt!

And I think I found the sugar free peanut butter recipe on here...super simple, and more or less guilt free! (A little more fat than I'd like...but eh, moderation, right?).  LOL. 

As always, thanks for keeping these posts alive...I certainly like to see what everyone is up to, foodwise.  It really does inspire! :D

That chicken recipe sounds awesome!  I wasn't sure how chicken and egg would taste.  Do you just go light on the egg?  Living in DC in a very Latino neighborhood, I have a Peruvian roasted chicken restaurant one block away.  I am seriously going to walk on over and buy some and make chicken muffins.  

I'm glad these posts help and inspire you, like they do me :)  You should post even when you think you have nothing interesting to say - because I am sure you do have something interesting to say :)

And my food today:

B1-1/4 c cottage cheese with peaches and 1 slice raisin toast with butter and apple butter

B2-grilled chicken breast (4 oz) and a banana

L-homemade collard greens with ham and 4 slices colby cheese and 4 Ritz crackers

S-Chobani

S-(pre gym) 2 pretzel rods

D-Salmon and corn

Dessert-skinny cow ice cream sandwich

Exercise:  boot camp 1 hour

Boot camp!  I am impressed :)  Your meal plan looks good :)  I have had apple butter before and love it!

I think your calories are fine.  On a day that you're working out a lot, I would think 700 or even more would be fine.  Look, you probably burn at least 1200 calories if you just sit on the couch all day doing nothing.  If you burn another 800 calories working out, that's 2000 you're burning.  Even if you eat 1000 calories that day, you still have a calorie deficit of 1000.

I think this early out, it would be hard for you to get too many calories.  You'd have to almost try to do it.  You'd have to be making really poor food choices.  As long as you're getting enough protein and at least most of what goes in your mouth is healthy, you should be fine.
