Does anyone else obsessively update their health tracker as soon as they lose a pound, so that their ticker shows that pound? LOL
What's on your menu today?
Mine is pretty tasty.
B: 3 egg bites made with egg whites, grated light Mexican cheese, sauteed (in pam) yellow onions and red onions and shallots, deli turkey meat, and some red hot pepper flakes. I made 24 yesterday and popped 3 in the micro here at work.
L: We have a team lunch at a Pho restaurant. In case you haven't had it, Pho is a Vietnamese broth based soup with rice noodles, meat or shrimp, and then you can add lemongrass, sprouts, and jalapeno, as well as sriracha (hot sauce) and hoison (sweet sauce). I will get shrimp pho without noodles. But since we can't drink after eating, should I have some broth, then eat the shrimp, then stop? I worry I can't eat the shrimp and then drink the broth lol.
D: Leftover turkey chili (this will be happening quite a bit for a while - have a bunch leftover!).
S: I bought some weigh****cher's jalapeno cheese sticks that have 50 calories and 5 g of protein! If I can make it to the gym this afternoon, I will likely have one before or after
This will bring me to a total of 582 calories, 12 g of fat, 38 g of carbs (so much higher than I want to be at) and 77 g of protein. The cheese stick would increase that a bit.

We are about to have another snow storm in Indy! They are talking up to 12 inches of snow again! I'm so freaking over this winter! I need warmth in my life! LOL
Time since surgery: Almost 13 months on the 7th
B: Protein coffee, 1 boiled egg, 1 slice turkey bacon
S1: 1 light Baby Bel Cheese
L: 1/3c Ground Turkey Stew over 1/4c Tofu Shirataki Noodle with fresh squeezed lime
S2: 1/2 Protein Bar
D: 1/2 Chicken Salad Wrap
S3: TBD
E: Snow storm so I might just do gym at my apartment homes not at my beloved Planet Fitness. 45 mins on Elliptical.
W/Vites: Working on it
Totals so far... Calories 838, Protein 87 grams, Carbs 41 grams, Fats 41 grams

Yes, you drink the broth first, then eat the shrimp. Yum, sounds really good!
So far today I've had some coffee and am having yogurt now. Haven't decided on lunch yet, but dinner will be a de-constructed pastitsio. ( gotta keep those evil little elbow macaroni separate! )
Will drink a protein shake on the run because I've got errands to run. Other snack will likely be some cubed Havarti. Yum.

B: oh-boy oatmeal, turkey sausage
L: low-carb frozen dinner (Atkins turkey & green beans), veggies and greek yogurt dip
S: greek yogurt/fruit
D: steak salad with feta, pumpkin seeds, steamed edamame
S: FF hot chocolate/protein bar
tonight is weight workout at the gym; will do a 20 minute quick cardio followed by upper and lower body heavy weights and lots of stretching (of course)
11 months out on the 13th
Breakfast: 1/2 breakfast burrito (eggs, turkey bacon, cheese & salsa), a few slices of banana and some blueberries drizzled with honey
Snack: had 2 sliced of sourdough toast with jam. For some reason I've had an hankering for toast
Lunch: Turkey and Cheese roll ups, probably some banana peppers on the side
Snack: protein shake, maybe some grapes if I get hungry waiting for my husband to get home from work. Never know when that's going to be
Dinner: Spanish Chicken Cutlets with yogurt sauce, asparagus, and rice casserole
todays a resistance workout day, and I'm really bad at actually doing those. So I'll probably walk a mile or two
Sister had her baby this morning so I was running late to work...bad bad for planning.
B- a banana from my desk and 06 oz almond butter
S- boarshead cracked peppermill turkey 1.5 oz with 7 crunchmast crackers and homemade hummus
L- MY beloved chocolate hazelnut protein shake (was running to late in the am)

I update my tracker weekly. Normally on Monday, but somtimes I forget to enter it for a few days, especially now that the tickers are not working.
I created a new recipe yesterday and the day before and my family is LOVING them! We'll have the leftovers of one of them tonight.
Here they are:
BUFFALO CHICKEN TOSS
2 tablespoons of Moore’s Buffalo Wing sauce
4 oz of reduced fat cream cheese
Cubed chicken thighs, about one lb
Large Vidalia onion
½ cup of broth—chicken, vegetable or mushroom
Put cream cheese out until at room temp. Mix by hand to incorporate the sauce into the cream cheese. Set aside. Peel Vidalia onion and make rings of 3/8 to 1/2 in thick, then cut lengthwise to make ‘smiles’. Add to pre-heated pan with broth and coo****il onion is translucent and beginning to caramelize. Reduce heat and continue to stir until onions are limp, brown edged and sweat out. Then add the cubed chicken, stirring to cook it through. Add as little broth beyond the ½ cup as possible. Once the chicken is done, stir in the cream cheese until it bubbles and all items are well incorporated. If eating processed carbs, try tossed with penne or fusilli.
CREAMY DIJON AND MUSHROOM CRAB DELIGHT
1 lb sliced cremini mushrooms
½ cup broth (prefer mushroom broth)
2 tablespoons creamy Dijon mustard
2 oz fresh soft chevre (NOT with any flavoring, plain chevre) but you could use cream cheese instead
1 lb fresh crab meat (I prefer legs) in roughly 1 inch segments
Freshly grated parm or asiago
Wash mushrooms well, put in a large saucepan or wok over medium heat and cook down until tender in the broth. Add more if needed, but do no****er log the mushrooms.
Reduce heat and add Dijon, chevre (or cream cheese) and stir until mushrooms are evenly coated. Add the crab meat and cook just long enough to warm. Divide into serving dishes (I use 4 oz ramekins) and sprinkle with the freshly grated hard cheese. Serve warm. If eating processed carbs, this is great with toast or pita points.

B- plain Greek yogurt with a T of sugar free strawberry jam, a T of pb2 and a few banana slices mixed in... I was going for a peanut butter jelly and banana sandwich vibe without the sandwich part... Pretty yummy.
L-roll ups of turkey deli meat and light Swiss cheese and a pickle spear
s- a few cocoa almonds
d-3/4 cup of white chicken chili from the crockpot with a slide of avocado on top
s- I'm not sure yet... Maybe some cottage cheese or another yogurt
exercise... Still plugging away at my couch to 5k
Hi all-great recipes, for one! I hope your survived the snow, Kenyatta! Ugh, I feel for you.
Sometimes our best laid plans don't work out, and I never got to that soup because my mom called and has been diagnosed with a rare form of cancer :( I immediately drove from DC to Charlotte, NC to be with her. I will take her to Philadelphia this weekend for her Monday morning meeting with a specialist.
I know you're all sending me positive thoughts and will be understanding if I don't do daily posts for a couple of days. But I just might, because this is a time when I previously would have dealt with stress through EATING and this post makes me accountable. So on second thought I will keep these going.
