What's on the menu today, RNY-ers?
Good morning! I am glad you are trying the egg bites :) I use that much egg beaters, or maybe even 1.5 cups of egg beaters, and then I use maybe two shallots, six pieces of chopped bacon, and maybe 1/8 or 1/4 cup of shredded cheese...plus spices...it's pretty thick but definitely has liquid. Do you use a cup of cheese and a cup of bacon and a cup of onion, or all three together equal a cup? I fill mine right up to the brim and it uses every last bit in the bowl. They puff up while they bake but quickly deflate so don't be afraid to fill 'em up! Let us know how they taste. Maybe you got the egg beater quantity wrong? I did that the first time, since I was looking at the nutritional info on the box...and they have it by tablespoon, so I was trying to convert tbsp to cups and math is just not my strong suit ;)
I always bag up 12-15 of them for the week's breakfast, and then put the rest in a baggie in the freezer to have some week that I don't have time to make them. This weekend i am hosting a brunch and I am going to make crab and cheddar ones, and bacon and goat cheese ones. YUM!
They actually came out pretty tasty !! (although, 1st time I've ever eaten them so I have nothing to compare to lol). I used 1 cup of cheese, then 4 pieces bacon, 1/2 chopped yellow onion & 2 green onions (or scallions). I think next time I'll just use less cheese :)

I can use less cheese (like 3 oz) if I use goat cheese which has a very strong taste, so a little goes a long way. Using 3 oz of light mozzarella gives me MUCH less satisfaction :) Just my two cents! I am glad you like them. I nuke them for 20 seconds each morning and 3 of them is a perfect breakfast at my desk at work! I eat them with a fork and each one is 4 small bites :)
They named the storm Pax? Haha, that's my son's name! Well, short for Paxton. I'll have to text him and tell him to stop messing with everyone! Meanwhile, more on topic...today's choices. I'm just not feeling it today at all, to be honest, so I may just make sure I hit my protein levels and not worry about much else.
B: Two slices of muenster cheese
L: Rest of my chicken and salad mix from yesterday
D: I have a nice London Broil that I'll rub and throw on the grill, add potato of some kind and salad for my husbeast
V, C and W - eh. I'll get 'em in, I guess.
Oh, and second the appreciation for the "bread" recipe. I remember making something similar many, many years ago in Weigh****chers, I'm glad to see the recipe again for those days when I'll just HAVE to have a sammich!

Your menu looks good and high in protein :) Enjoy your day and YES I may make the oopsie bread for my brunch. Two guy friends of mine (who are a couple) are usually doing low-carb (though they will certainly take part in mimosas lol) so they can be part of my guinea pig group!
Breakfast - cappuccino protein shake
Snack - leftover slice of cheese pizza from dinner last night
Lunch - tomato soup
Snack - probably yogurt and some apple slices
Dinner - depends on whether I decide to go to the store today or not, if I don't go it might end up being another protein shake because I don't have much in the house to cook right now
Snack - yogurt or a protein bar

I will say my eating today has been AWFUL and I need to get it together. I normally would have had 40 grams of protein by now, I have had 12. Urgh! I have had a total of 125 calories today. I am just feeling like no matter what I put in my mouth, it is going to come back up. I went on a long walk in the snow (OH YES...LOVE THE SNOW!) and returned home and had warm tea and thought I was going to lose it. I HAVE kept my vitamins going, but will have an Isopure in about 30 minutes and see how that goes. Not sure why I am feeling nauseated after eating, that is not normal for me and I do not otherwise feel ill, but gee whiz, I gotta get some food in me!
I have had over 100 oz of liquid since 5a, so I am taking that as positive, too. But the protein drinks and food are just not going down well today.
