What's on the menu today, RNY-ers?
Hey Ceithlenn! You are kicking ass with your trainer! I start with mine in two weeks. I know it's going to hurt, but I am so excited. I need someone to kick my ass. My sessions are only 25 minutes so I figure I can do 25 with the trainer and then 40 on the treadmill. I dream of seeing a 1 before my weight one day :) For today I will take a 2 lol. 299.8 means I just snuck into Twoland or whatever it's called, but I am still thrilled! Salmon burgers are awesome! I love salmon with a little dijon mustard. I just bought a small jar. I also got a Misto so I can spray olive oil and I use SO much less. I'm glad you had fun in Chicago! Gotta stay out of the deep dish pizza places lol. Happy birthday, by the way!!!
Thank you! I use the sauce Eric makes for the salmon, crushed red pepper, soy, rice vinegar, garlic and some stevia or splenda then cook. It is thin without real sugar to thicken it up but still tastes amazing. I love spicy mustard as sauce on things it gives it some creaminess and flavor without a lot of calories.
Congratulations big time! I know you were so thrilled! I love reading What's on the Menu each day. I thought I'd finally join in. I'm not weighing these days as I have been on a month long stall. I know I'm losing again but do not want to be a slave to that little flat metal beast of a scale. I'll attack it this weekend and see where I am. Here goes:
B. Light and Fit Blueberry Greek Yogurt
L. 3 oz Meatloaf with cooked spinach (Helps keep me regular) I'm from the south and I add vinegar to my greens! Delish!
D. 4 oz Roasted chicken breast in romaine with hearts of palm, marinated mushrooms and lo-cal dressing.
S. 24 Red Bean Popped Chips "Spicy Queso" from Market Basket (1 serving) 100 calories 18 carbs 3 protein. These are sooo... good!

Hi Southern Peach! I'm so glad you decided to post! I never thought about putting spinach in my meatloaf. What a great idea! And thanks for being so happy for me :) I swear, I love this site for just that reason. I feel like everyone is here to celebrate everyone else's successes. And I would NEVER tell my friends or family that I weighed in the 300s (I seriously doubt anyone would think I did because they are all thin or normal and so would have no concept) so I can celebrate here :) You are probably like me and miss CRUNCH if you like the popped bean chips so much? I have found two things that help me. One is cheese crisps at Wegmans - made of JUST cheese. 3 of them are 80 calories, 2 carbs and 6 protein. I eat low carb so I couldn't have your yummy bean chips :( Also, I have started baking kale. Put parchment paper on a tray, cover it with the leafy bits of kale (I buy a bag of leafy bits) and then spray with a little olive oil. Use seasoned salt or crushed red pepper or even parmesan cheese and then bake for 15 minutes at 350. They come out SIGNIFICANTLY smaller and crunchy! I feel like I am eating popcorn or chips when I eat them as a snack, in front of the tv for example. Not high in protein, but carbs aren't too bad. Pickles help too, for crunch!
Also a HUGE congratulations for being off of your insulin and BP meds! That has to feel amazing!!!
I'm definitely trying the kale! My NUT told me not to worry about the carbs but I am watchfull. I don't eat white things, potatoes, pasta, etc. The chips are my splurge though. Most times I split and have half a portion as these chips are of good size and are quite filling.
This is the one place everyone is in the same boat. Weight is a number that we can share with each other as opposed to the outside. I read this site daily and get so much inspiration from everyone else. I'm so pleased with others accomplishments. I feel if others can do this so can I. Everyone on this journey is an inspiration!

D: Trying a new fish tonight - Swai - has anyone had this? It is supposed to be a mild, flaky, moist fish. I am going to try baking it in parchment paper with some lemon and herbs. Also having 1/c zucchini and 2 TBS applesauce

Thanks, Liz! I haven't had Swai but I have heard of it. Your preparation method sounds delicious :) I drink the EAS Advantedge shakes too and I like them ok. They are a good source of protein for me! I have not seen the apple Chobani yogurt either. I just bought a banana cream flavored light and fit greek yogurt. I will try it one of these days!
