I'm SO excited for you! Congratulations and all the best! Rest up this weekend for the big week ahead.

I had a job once opening a new outpatient facility/groiup home with 24 beds and got to do lots of shopping on their dime...like 10's of thousands at Macy's, JC Penney's...etc. Yup. very fun spending other people's money.
QOTD: It would be pie over cake only because I find most cakes fall short on delivery... I am often disappointed. Cheesecake is my specialty that I am 'known' for in my friend circles. If I make cake it will not have canned frosting on it... Cream cheese is my go-to, and a huge batch which may or may not have leftovers. Canned Chocolate frosting is good if you microwave and pour over a Bundt (Bun-t? Bunt? My Big fat Greek Wedding :) ) Cake.
My go-to 'emergency' cake when my son was growing up and all of a sudden we had to go somewhere and "Oh we need to bring something Mom' was a Duncan Hines Chocolate Fudge Cake made in a Silicone Bundt Pan in the Microwave- 10 minutes on high. Then Microwave a can icing into a glaze and pour it over that baby. Always a hit. No one ever said- Did you Microwave this?
I said I was cutting out cheese this week- I did really well, except for using some Parmesan. Made no difference on the scale. I've cut back, got rid of the faux carbs, don't feel like I am off the rails but the scale is hanging where it is hanging. :(
So I figured I'd show food pics, because who doesn't love a good food pic? First my stash of cheese...LOL. You can't even see all the cheese in the pic. I am one person. Hi my name is Cynthia and I am a cheese addict.
Second is my favorite IP recipe which I made again this week...Pork carnitas. It is a hybrid recipe and I don't measure anything...but so easy and so yummy...
Third the gorgeous flowers I bought at Costco yesterday. Just because.
B: Coffee latte with Fairlife/Miralax
hard boiled egg, mayo on Wasa with everything bagel spice (#obsessed)
S: Protein drink TBD w/Cashew Milk
L: Pork carnitas and veggie
S: ???
D; Costco chicken, green beans, cauli mash
S: yogurt w/1/2 scoop mint cookie, chai latte
EX: Today is the long day on my Jeff Galloway run app. JB I is scared. The long day they do by mileage- so it is 3 minute warm-up and cool down walk with a 2 mile run in between. Now I know that seems like small potatoes to some, but I have never run in my whole life before this besides the 50-yard dash in grade school. If I don't do it I will have the 26-year-old trainer at the gym to answer to... and he will make me answer. hahahahaha

Go on and rock that run! You don't have to go fast- just keep going!
My cheese stockpile is nowhere as diverse as yours-- but I too cut back on eating cheese and it's a bit piled up now.
I prefer the box cake mix (betty Crocker, Pillsbury etc) and frosting. I've never had the desire to recreate the wheel when they have pretty good imitations. I'll make carrot and cheese cake from scratch but rarely- cause then I want to eat them :-)
