Your cheese pic made me laugh out loud. I can relate...
I read quite a few IP pork carnitas recipes and because I go for the easy button, this is what I came up with:
Most recipes tell you to take the meat out after cooked and shred and put under broiler to get the 'char'- but wet meat doesn't want to brown and to me it dries it out. I tried it once. No. So I use 2 small pork loin- but you can use other pork, I've used a sirloin roast or could use port butt... I cut each one in 3-4 big hunks and either brown in IP in barches, or this time- which was so much better I dragged out my big cast iron skillet and got some nice browning going on.
In IP - saute 1/2 large sweet onion in slices- add pork chunks as they are done.
Layer spices- Medium amount adobo, small amount cumin, lots of chili powder- I use Chili 9000 from Penzey's which is a chipotle chili powder, Then pour in 8-10oz salsa verde. Meat button 45-50 minutes. Slow release and shred. Usually I will add a little more salsa.
This is my faux recipe- but very easy and very delicious....

A good friend of mine just told me about Penzy's spices and how much she loves them!
I don't have an IP so I will put in the crock pot until it's tender. I'm guess like 5 hrs or so. Maybe I can find a comparison of pressure cooker or IP times vs crock pot time.

We just bought a camp in the foothills of the Adirondacks. This picture is of the "brook" (right now it looks like a river!).
QOTD: Chocolate cake with chocolate frosting is my nemesis. When I was pregnant with #1 I would go to the local diner and order an egg salad sandwich, poutine and a giant piece of chocolate cake. It's no wonder I gained 60lbs. No food issues here!
I worked out with my trainer last night and HOLY CRAP. I had to pull/push the sled for the first time. I had visions of my life flashing before my eyes, but I did it! And I was rewarded with a jaunt into the 177's this morning
My daughter has her last gymnastics class of the semester tonight and then I'm hoping for a quiet weekend. It's supposed to be warm and rainy, so maybe some reading on the covered front porch.

Can I come stay at your camp?. We just got back late last night from a trip to visit national parks in Tennessee and Kentucky. I've discovered I sleep really well with running water and the mountains were great exercise for my boxer Lily and I. We stayed at Mammoth Cave campground 4 nights and at Frozen Head State Park and Davy Crocket birthplace state park in Tennessee and at Cumberland Gap National park in the corner of Virginia. They were all amazing!
