My cruise is completely paid off and passports are in hand. (reminder-you must be paid in FULL before the end of the month). Once you are onboard they will hold an "excursion" discussion to tell you about the differrent options that are available but you learn the same stuff by reading online and making choices ahead of time. Personally, I'll probably just jump into a cab and have them take me to a public beach. I've "been there, done that" before. If swimming with the sting-rays is an option I would highly recommend it. It was a blast and well worth the money when we did it years ago. I haven't even looked at our options yet cuz we pretty much decided we'd go explore on our own.
Narrow down your choices to one or two and start a thread to see who else might want to join you, the more the merrier.

RNY revision from lapband 7/30/07...TT/BL 10/9/08 and at GOAL
I've been taking those cruises one or two times a year for the last few years. If you are going to do an excursion book it early. The best ones sell out first. The good news is....you can cancel within 24 hours of the excursion and get your money back. DO NOT do the zipline in Cozumel unless you want to get there via a climbing wall.
For those that want to just 'hang out', Jimmy Buffet's is a great place and the patio is great. There is also a good beach that's not a far taxi ride and is great.
Since I'm not much for traipsing through the ruins, I pretty much choose shopping (and downtown has a GREAT shopping area); the beach, or Margaritaville. Of course, Senor Frogs is always fun and their conga line will net you a mouthful of tequila everytime you go past the bar. I'm not a big Carlos & Charlie's fan but it's close to Senor Frogs.
Plenty to do. I can't get off the last week of the month or I'd go. Darn goals for work.
