Baby Corn Tortilla Pizza.. I Love You (pic)

So I tried something new. I miss pizza and thought I'd give it a shot. I put a tortilla in a pan with a very tiny bit of olive oil, basil, pepper and garlic salt. Topped with tomato basil pasta sauce, mozzerella, three pepperonis (diced), a few sprinkles of basil, pepper, onion powder and galric salt and then topped with parmesian-rameno shaker cheese and fried that bad boy up!
Super yummy. I ate half and gave the other to my super happy 4 year old who loved it as well!

 I used corn, my doctor says no flour. I probably could use wheat but their big and I LOVE the taste of a lightly fried corn tortilla, especially when cooked in a well seasoned pan… umm umm umm

what kind of tortilla is it? Corn, flour, wheat?  Is that one of the 6" ones?  It looks great and I cant wait to try it!

 Corn, love the corn… I waited to put it on till the oil was really hot so it could crisp up and then pulled the pan off when it was crisp and waited for the cheese to melt before taking it out of the pan :)
