simple chicken recipe
My aunt who is the queen of easy cooking (bland cooking too, shhh!) made chicken tonight and it was yummy! I am not a huge chicken fan, its bland to me and after 3.5 months it is just starting to go down pleasantly..but this was quite yummy..
Here is the gist:
Dijon baked chicken
spray baking dish with non-stick spray, preheat oven to 350 degrees.place chicken in the dish. coat chicken breast or chicken tenders with dijon mustard (not a super thick layer but enough to coat), then coat with some sour cream or greek yogurt, top with shredded monterey jack cheese. cover with foil , place 5-6 slits in the foil. bake covered for 20 minutes, remove foil and bake for another 20 minutes or until done.
