The more I work out, the more exponentially hungry I am that afternoon and the next day.
I did 1 hour on the ellipitcal on Monday and Tuesday.
Monday's calories consumed 1,355
calories burned 511
net calroies 844

Tuesday's calories consumed 1,195
calories burned 370
net calories 825

Today's calories consumed (ALREADY-- and I haven't eaten dinner!) 1,038

How do I stop from eating more calories the day after I work out? (or minimize it)

I'm impressed! I just can't figure out how you actually get the food in?, I can't seem to get in more than 600 ccal, but I am only 3 weeks out, and you are looking great and I'm so glad you posted. Hard to believe I have a chance at geting where you are.

IMO, your body needs those extra calories since your burning so many. Just make sure those extra calories are lean protein, veggies and low fat dairy.

I think your body needs the extra calories......  if you are working out vigorously. The only problem I see (anecdotal evidence from personal ...family....friends experiences)   If for some reason you cannot or stop the workouts....the eating "routine" may continue  for some people....leading to possible weight gain.  My brother sometimes worked out like a monster....then  he would say "I started getting hungry all the time?"  I said "back off on the workouts"  he did and it helped  When he stops his workouts (due to injury etc)  He will gain weight.  Cause he still continues to eat like he is working out!  Need to find your own balance point I suppose?  So if you stick to protein and veggies you will be satiated and not do too much damage.

I agree. Remember - your body burns close to 2000 calories per day just sleeping, breathing, etc. So you are putting your body into a good calorie deficit. Jimbo makes a good point - just make sure your calorie deficit continues even when you don't work out (meaning eat fewer calories since you're not burning the extra).
