 I made something similar with zucchini subbed for pasta, but that looks pretty awesome.  Never woulda thought of the muffin tin instead of big azz pan.  Thanks for the post, bookmarked.

I make lasagna with zucchini too. I'll try the muffin tins too...great idea.

I did make Joe's special this week and found my stomach doesn't like beef as well as chicken. That was the first beef I've had in months and months and my stomach really spent a long time digesting it. Noisy too. Maybe I'll stick to poultry.

Try ground chicken.... that's what I get most the time....Safeway has a Foster Farms (I think) ground chicken....tastes great!

I crisp my eggplant by baking it on a cooling rack. Air circulates top and bottom.

P.S. Actually it is a cooling rack for baked goods, like cooling cookies. I give it a spray of olive oil to prevent sticking, and it makes it easier to clean up. It's a trick I learned from Rachael Ray. Place the cooling rack on top of a pan, to catch crumbs.

Now I feel dumb !!!

I wanted to crisp it in the oven....but didn't want to make a mess......

So that's what that rack is for that goes in the oven pan !!!
