I agree with the suggestion for unflavored protein - lots of brands make an unflavored or "natural" flavor. Then you can add it to other foods or add your preferred flavors to it to make it weaker. There are also some savory flavored proteins out there - I know Unjury makes one that is Chicken Soup, and I have a sample of a vegetable soup flavored one in my office at work (can't get to it right now to tell you the brand).
For the chocolate ones, I often add some unsweetened cocoa powder to it - cuts the sweetness while boosting the usually weak chocolate flavor and masking some of the other "odd" flavors that are often in them.

you can buy unsweetened ones at health food stores and then add a lesser amount of sweetener. Also, add unsweetened coco powder (a half to one tsp) to a choc drink and its more bitter.
To a vanilla or most any other drink, add a blob of greek yogurt and mix. The tartness really cuts the sweetness. a little cinnamon helps too. i have not tried it but i see no reason you couldn't add a squeeze of lemon or lime. also there is one brand of protein drink that is rasberry iced tea. I used to make this using strong tea instead of water so there was plenty of tea taste. this one wasn't so bad.
I don't know why they make these drinks like this. costco premier was one exception that was a little better. also maybe you could make a drink half of the regular sweet stuff and half unsweetened unflavored to cut down the sweet.
Also, unflavored soy protein powder goes reasonably well in soups if you don't overheat it and get it well blended with a whisk.
I really hated this stuff too in those early weeks and didn't figure out some of this stuff until way later. hope it helps.

Before surgery I tried and liked everything I now have on hand. I'd make them with milk and loved them. After surgery, that changed. All of a sudden everything is too sweet. I can't make them with milk anymore, either. Too thick!
Syntrax nectar has some flavors I like and they're not as sweet or thick as some others, either.
I add some Starbucks Via to my morning Click and warm it up. The coffee cuts the sweetness a little.
