Greek Ground Lamb and Rice

1 lb. ground lamb
1 lg. onion, chopped
1/2 tsp. cinnamon
1/4 c. wine
1 sm. tomato
1 med. Italian squash (sprinkle with vinegar)
Rice cooked for 4 Brown lamb in butter. Add onion and brown, add cinnamon and tomato, put squash in bowl, add a little vinegar and salt. Brown in butter, add to meat. Simmer until all tender, add wine. Cook rice. Serve meat over rice.

Serves 4.

I haven't tried to work out the protein/calorie count yet, but without the rice it looks great!  Any feedback, pro or con?

According to MyND.self.com that recipe would be 262 calories for 1/4 of the recipe with 21g of protein and 16g of fat without the rice.  That also doesnt include cooking it in butter - that will add a ton of calories and fat.

If you make it you should substitute "I can't believe its not butter" or a spray of pam/canola oil.

Its nor Horrible, but you could do better.

I didn't use the butter--just sprayed with Olive oil Pam.

I also drained off the fat from the lamb.

This will actually be perfect for me today since I slept until 1:00 (no idea why--went back to bed and slept like a rock).  So I haven't had much to eat.  Thanks for crunching the numbers!

Sounds wonderful! I like to use brown rice, to keep it a whole grain. I'm guessing a portion would be more like 1/8 of the recipe.
Enjoy!
