For most........ 1000-1200 cals is a basic baseline for Maintenance.......
But, your approach is sound..... raising it little by little..... while re-introducing different levels and foods.
Heck... you may end up one of the lucky ones that levels off at 1800 cals !!! Wouldn't that be something !!!!
