When MFP projects how much you'll weigh in X weeks...

That thing is just a projection "if every day were like today". It also does not take into account your WLS which changes your physiology. It also uses your projected level of exercise and does not account for stalls. It does not take into account the type of diet you are on and the effects of Ketosis.
I've never given it enough credence to even pay attention to it before, and pretty much assumed everything you say. Today caught my attention in a "whoa!" way. But now that I'm thinking in those kinds of terms, I think I'll see what weight I can get to by Christmas, out of curiosity.

You can customize your settings in MFP here is how:
Change Goals:
Click on Goals (under Home)> Click on Change Goals > Click on "Custom: > Click Continue
Set your Calorie Target first then you can set Protein, Fat, Carb ect....
Click Change Goals to Save your new Goals
Change Diary Setting
Click on Settings (under APPS) >Click Diary Settings
You can Change what Settings you want to Track ie., Protein, Carbs, Sugar, Fat
You can Change the Names of Meals and Order they are listed. I eat 6 times a day so I have 6 Meals listed
Breakfast
Morning Snack
Lunch
Afternoon Snack
Dinner
Evening Snack
