New Recipe -- Ham Shingles (and a question)

  I wanted something salty and savoury.  I put some thin slices of ham on a hot iron skillet (nonstick will do) without any spray or oil.  I sprinkled a bit of feta (doesn't take much since it's so pungent).  Cooked until the ham got leathery.  I wanted something really chewy, something to satisfy my craving to "eat."  I rolled two of them up for the picture, so you could see that they're browned. But they were leathery enough that they didn't want to stay rolled.   It actually turned out delicious. If you like feta, of course.  I started out with 1.5 ounces of ham (53 calories, 7 g protein) and .25 oz of feta (18 calories, 2 grams protein).  All in all I'm very pleased.   Question:  After cooking it actually weighed a half ounce less than the total precooked.  Which weight would you use when logging?  Precooked? Postcooked?  Did fat cook out so I don't have to count those calories? If so, it didn't leave it behind in the pan.  This is very lean ham.

Yummie.......I will definitely try that when I am able to eat solid foods.  I love feta cheese, and I bet it does taste good with ham.

That looks yummy!! I usually measure out my foods after cooking. It's never steered me wrong. lol

weigh it before you eat it, so go with the cooked weight.

it does look oddly tempting. I may give it a go. You could do a lot with that too. Add some fresh spinach to make give it some fiber and great nutrition.

I guess it depends good question... The Dietitian I work with said to weigh meats/whatever it is your cooking AFTER! 

 

Keith, why do you say before?? Before I would think it has water weigh in it and that cooks out, but then again I'm no pro :)

My understanding:  to calculate nutritional values, pre-cooked.  That's how they figured it on the packaging, yes?  To figure out how much to eat, post-cooked.

Nutritional values, weigh before cooking (the fats, carbs, and protein don't get cooked out, but the meat shrinks).  When figuring out how much to eat for your sleeve, measure (not weigh) after cooking.  You are looking for volume here, not weight.

I always weigh before cooking, if I can.

Besides, deli meat has a lot of water in it... that's likely all you cooked out.

Having said that, I always figure it's best to underestimate than overestimate.
