A little salt is important to make the flavor of fresh cheeses pop. It's generally included but often with mozzarella the salinity of the brine is a little lacking.

It is bland, but it's a favorite with my family (even my little kids).  We usually just do a standard caprese, with balsamic vinegar, olive oil, ripe tomatoes, and fresh torn basil (and a little salt).  I add capers if I have them.  Great paired with a grilled dinner and nothing smells like summer more than basil!

You've got my mouth watering just thinking about one of my favorite summer treats: fresh mozzarella (the little bitty balls) with grape tomatoes and cucumbers straight from the garden, and balsamic vinaigrette. Delish!!

Caprese (spelling?) salad with homegrown tomatoes and basil is a favorite summer time treat. I have done Frisco's meatball idea, and also a good use for leftover salad it to top grilled chicken the next day. yum.
