Whatcha Eating Today VSGers? -- Sunday
I didn't really deviate too much from my normal way of eating for Thanksgiving, but I did eat "real" food for breakfast with my family instead of my standard shake and, oh my gosh, my bowels are really looking forward to getting back to my normal way of eating! I hadn't realized what a change that would make for my system so I really need to rethink this plan for Christmas. I might stick to a shake except for my family's traditional Christmas morning breakfast. Just to keep my bowels happy!
Tetrazzini has always been my favorite way to use up turkey leftovers, so this year I'm going to try to bake it all without the pasta added and serve it as a sauce on top of pasta for the guys while I eat it without the pasta. I hope this will be a delicious experiment.

Hi, Bufflehead! It is based on a recipe a friend gave me that I toyed with. But it's pretty great!
1 lb lean ground beef
1 lb ground lamb
2 TB cinnamon
1 ts cumin
1 TB garlic powder (original recipe calls for chopped garlic but I wasn't sure since I'm so newly post-op)
1 TB rosemary
2 bay leaves
2 ts red pepper flakes
1 28-oz can tomatoes (I used whole peeled and whizzed them to crushed in my blender)
Brown meats together & add to crock pot. Add all spices & tomatoes. Cook on low for 5 hours. Voila! Super easy. The original recipe calls for finely chopped onions, as well as black olives. I was unsure of the onions so early post-op so I left them out, and didn't miss them! Additionally, to crumble feta over it when serving. I might add the feta in the future - I'm sure it would be great!
Note: this made TEN 1/2 cup servings for me. :)
breakfast - sirloin romaine lettuce wraps
lunch - scrambled eggs with salmon; roast brussels sprouts
dinner - seared scallops, artichoke hearts
snacks - Chike iced coffee protein shake, hot gingerbread mocha protein shake, ostrich jerky, roast seaweed sticks.
There are different ways you can do it, my favorite is:
HealthSmart protein hot chocolate (available at Nashua Nutrition) + 2 tsp instant coffee + 1/2 packet Nestle fat free hot cocoa mix + 1 shot Torani SF gingerbread syrup. I mix mine with 1/2 water & 1/2 unsweetened vanilla almond milk, heated just under boiling, and use an immersion blender for a super smooth drink. I may top mine with fat free Reddi Whip if I am feeling indulgent
