401 LBS TOTAL - Thanks Santa

I think the stall is over. I weighed today and have lost 6 more pounds WHOO- HOO!!!!
My sister and I had a goal to loss a total of 400 lbs by Christmas. Well Santa has come early. As of Today we have lost a TOTAL of 401lbs. We both started the pre-surgery diet around April 17 of 2009 and now 401lbs gone FOREVER !!!!
Time for a NEW goal.
WE LOVE OUR D/S's !!!!!!!

Bagel Cheese Dip

2 jars Old English cheese
1 8oz. cream cheese
1 container onion/cheese cream cheese
Mix all ingredients well. Spread on your favorite bagels - bite size

Low Carb Veggie Pizza

2 Latortilla Factory low carb wraps (large)
1/2 cup reduced fat chives & onion cream cheese
1/2 cup light sour cream
1 package Hidden Valley Ranch Dressing (use dry mix)
1/8 cup shredded carrots
3/4 cup raw broccoli
3/4 cup diced tomatoes
1/8 cup diced green pepper
1/8 cup diced cucumbers
3/4 cup Kraft Light shredded Cloby & Monterey Jack Cheese
1/2 cup sliced black olives

Mix cream cheese, sour cream, and dressing packet together and spread evenly on tortillas
Top with veggies and olives and sprinkle with cheese
Cut each tortilla into 4 pieces and serve (8 servings total)
Per serving: Cal-170, Fat-10g, Protein-10g, Carb-12g, Cholesterol-23mg, Sodium-870mg, Sugar-1.6g, Fiber-4g

Salsa Texas Caviar

1 can white corn (drained)
1 can yellow corn (drained)
1 can pinto beans (drained)
1 can black beans (drained)
1 can black eyed peas (drained)
6 green onions chopped w/tops
1 each green/red pepper chopped
1 can diced tomatoes (drained)
1 can diced tomatoes w/green peppers or w/green chilies
1/2 cup chopped cilantro
1 tsp of garlic powder or salt/or you can use minced garlic
16 oz. Fat Free Zesty Italian salad dressing
Mix all together and chill at least 2 hours

Chicken Salad Sandwiches

2 cups chopped, cooked, skinless chicken breast
1 1/2 cups seedless grapes, rinsed and cut in half
1/4 cup diced celery
2 Tbsp chopped basil
1/2 cup thinly sliced green onions
1 cup fat-free mayonnaise
1/4 tsp salt
1/4 tsp ground black pepper
1 Tbsp fresh lemon juice
Combine all salad ingredients in a bowl and mix well. Serve on wholegrain bread, 1/2 pita pocket, or large wholegrain tortilla.

Pumpkin Pie

4 oz. light cream cheese, softened
1 tbsp. skim milk
3 pkts. Splenda sweetener
1 1/2 cups Cool Whip Lite
1 prepared 9" pie crust
1 cup skim milk, cold
16 oz. canned pumpkin
2 pkgs. vanilla instant pudding, no-added-sugar (4 serving size)
1 tsp. cinnamon, ground
1/2 tsp. ginger, ground
1/4 tsp. cloves, ground
Mix cream cheese , 1 tbsp. milk and 3 pkts. Splenda in a large bowl with wire whisk until smooth. Gently stir in whipped topping. spread on bottom of crust.
Pour 1 cup of cold milk into large bowl. Add pumpkin, pudding mixes and spices. Beat with wire whisk until well mixed. Mixture will be thick. Spread over cream cheese layer. Refrigerate 4 hours or until set. Garnish with additional whipped topping, if desired, Makes 8 servings.

Mug shot

Sorry about my mug shot. The truth is out now. I have a life sentence of losing weight. (I'm not going to appeal). I have been trying to get a picture up for a few weeks now. This is the only one that made it so far. Taken with my laptop as I snoop on this site. The OLD MAN lurks!!!!!

Tangy Broccoli Salad

3/4 C Light Miracle Whip
2 TBSP Splenda
2 TBSP Apple Cider Vinegar
3 C broccoli: cut up to bite size pieces
7 slices crispy bacon
1/2 C Golden Raisins
1/4 C Sunflower seeds
Mix the Miracle whip; splenda & vinegar together in a large bowl.
Add remaining ingredients and mix. Cover and chill at least 1 hour prior to serving.
1/2 C serving equals:
83 Calories
5 g Fat
7 g Carb
4 g Sugar
4 g Protein

Pumpkin Pie Mousse

Thursday meeting was awesome. As I can I will post some of the recipes for those who could not be there.
PUMPKIN PIE MOUSSE
2 - 8oz. package of Low-fat cream cheese
1 - Cup Splenda
1 - 15oz. can of pure pumpkin
1 - T Pumpkin pie spice
1 - 8oz. container of Cool Whip
Cream together the first 4 ingredients and then gently mix in Cool Whip.
Refrigerate or freeze before serving. You can also serve on a ready made graham cracker crust. (adds 90 cal.)
16 serving, Cal.118, sugar 3.4g, fat 9.2g, protein 2.4g, carb 7.9g
Optional: Garnish with 2 tbs. Costeilinis S.F. Cinnamon Bliss
