Yummy Oatmeal-Cottage Cheese Pancakes

Ok, when I first looked at the ingredients for this recipe I kind of cringed but it turns out this recipe is very yummy. My husband and son like them too. I like to top them with a little bit of peanut butter or yogurt with cinnamon. Sometimes I use sugar free syrup if I need something sweet.Oatmeal-Cottage Cheese Pancakes - they freeze great - with waxed paper/plastic wrap in between each layer.
1 cup oatmeal, ground (be sure to measure before you grind it in the food processor/blender)
1/2 teaspoon baking soda
1/8 teaspoon salt
3-4 tablespoon Splenda Granular
1/4 teaspoon pumpkin pie spice
4 eggs
1 cup cottage cheese
1/3 cup milk
1 teaspoon vanilla
In a large bowl combine the ground oatmeal, baking soda, salt, Splenda and spice. In a small bowl whisk together the eggs, cottage cheese, milk and vanilla. Pour wet ingredients onto dry and stir just until mixed.
Heat frying pan over medium-low heat. Spray with cooking spray, drop 1/3 cup of batter into pan and fry until golden brown on the bottom. Flip and continue cooking for another 2-3 minutes. Recipe makes about 8 pancakes.
Per pancake:
118 Calories; 7g Protein; 5g Total Fat; 5g NET Carb; 2g sugar; 166mg Sodium.
