I work nights so in order to be kind of timely I will have to do deja vu posting. I will post yesterday because I am not even starting today while you guys are toodling off to sleepy land. I should normallybe earlier than this but I stayed up extra late to wake my husband up for his flight because we were afraid he would oversleep. I also dont eat meals perse because it doesnt work for my schedule. My doctor approved me deciding what I will eat for the day and then just gnoshing when I can.

I am 8 months post op as of yesterday. And I started logging on my fitness pal yesterday. I would have scanned my husband to find his nutrition count if he had one of those scanners!!!

Premier protein w/decaf americano with sugar free peppermint

Light & fit caramel apple pie yogurt

Lazy Lasagne(MY FAVE!!!)

Creamy Tomato Soup

2 pieces of pumpkin spice candy(it's a diabetic candy)

1 piece of gum

1/2 of an apple Chardonnay Chicken Sausage from Trader Joe's

I make half this recipe and then cut it into 8 pieces. It freezes great and I LOVE it.

 

Lazy Lasagna

FEEDS 6 TO 8 (HALVE INGREDIENTS IF YOUR FAMILY IS SMALLER)

  • 2 pounds ground meat (beef and venison work well)
  • 2 (12-ounce) jars no-sugar-added pizza or spaghetti sauce 
  • 1½ tablespoons dried oregano
  • ½ teaspoon Mineral Salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • 2 (10-ounce) packages frozen chopped spinach, thawed
  • 1 (8-ounce) package 1/3 less fat cream cheese
  • 1 (14-ounce) container 1% cottage cheese
  • 2 large eggs
  • 1 (8-ounce) piece part-skim mozzarella cheese, grated
  • ¼ cup finely grated Parmesan cheese (for sprinkling over top; green can is fine)
  1. Preheat the oven to 350°F.
  2. Brown the meat in a large skillet over high heat, then drain off any excess fat if necessary. Add the sauce and seasonings, and simmer over low heat for several minutes.
  3. Put the spinach in a colander and squeeze and push to get all the liquid out.
  4. Put the cream cheese, cottage cheese, and eggs in a food processor and process until smooth.
  5. Layer half the meat sauce in the bottom of a 9 × 13-inch baking dish. Top with half the cheese mixture, then layer on half the spinach. Follow with half the grated mozzarella. Repeat the layers, ending with the mozzarella. Top with a good sprinkling of Parmesan cheese. Bake for 40 minutes or until bubbly.

Oooooh. I'm making for me.  My husband won't eat any cheese unless it's on pizza, so I don't worry about making for the family.

I posted it above. It is probably one of my favorite recipes. Super easy to make, rewarms awesome. I freeze mine in single portion in ziploc bags and take it to work. Helps keep me on my program. You can also find it on pinterest. It is a Trim Healthy Mama recipe
