OMG 15 LBS IN 4 WEEKS.. I LOVE...
June 28, 2008 2:09 am

OMG- She has really done it this month. Melissa after getting a fill 4 weeks ago has lost 15.3 lbs. I am so happy, I can see how much more motivated seeing this number than when she has a few months of low losses. Being a support group leader and now working to become a Life Coach propels her further into her passion for public speaking. She impresses me so much her love for me, our girls and my mom grows as she shows this by the care for her health, proved through her strength in losing weight. I know that I sound like a broken record but I am so proud of her and of any person who can make this type of a life changing decision. As the great Dr. Rehnke says “You didn’t gain it in a day and you won’t loose it in a day”. But 15.3 in 4 weeks WOW. I just love her so much and ask God to keep her on this track towards continued health.

Information on recipes
June 24, 2008 12:10 am
All recipes I post are high protein/low carb for the purpose of helping others with their carb intake.   Unfortunately, I do not have a list in of the amount of carbs on everything so if you see something you think is questionable, please let me know!

As I post recipes, I am trying to type them in a dark purple font so they are easy to see.   I would also appreciate if you would take the time to comment on the recipes if you try making them.   Give them a rating.   Let us know what else you served with it or what changes you made to fit your family.

I really hope you enjoy this addition to the blog!

Open faced Chicken Cordon Bleu
June 24, 2008 12:02 am
This is a very easy recipe that I use because it is easy to please the whole family...some don't eat ham, some no cheese, others just the chicken.    But everyone loves it.   Relatively inexpensive to fix and definately high protein low carb version.   For the family I serve it with rice.   For me I add a little extra spinach and skip the rice.

4 chicken cutlets (1 pound total; about 1/4 inch thick)
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons unsalted butter
8 spinach leaves, trimmed
4 thin slices boiled ham (2 ounces)
3 ounces Swiss cheese coarsely grated (1 cup) or slices

*Preheat broiler.
*Pat chicken dry and sprinkle with salt and pepper.
*Heat butter in a flameproof 12-inch heavy skillet over moderately high heat until foam subsides.
*Sauté chicken in butter, without turning, until cooked through and undersides are golden, about 2-5 minutes based on thickness.
*Remove from heat and turn chicken over, then top each cutlet with 2 spinach leaves, 1 slice ham (folding it to fit), and 1/4 cup cheese.
*Broil 3 inches from heat until cheese is melted, 1 to 2 minutes.

Egg Mock Muffin
June 23, 2008 5:37 am
These are great fixed in a muffin pan or a 9x12 pan but don't forget to grease the pans otherwise you will have a mess.   These can be frozen and makes a great quick breakfast or snack.   My daughter loves them during the school year.  If cold zap in microwave for 15-20 seconds, if frozen try 45-50 seconds.

Ingredients:

1 package ground sausage (use bacon or ham if you like)
1-2 oz of shredded cheese
10-12 beaten eggs
6Tbsp whipping cream

*Preheat oven to 350 degrees.
*Cook sausage well and until crumbly.
*Spray muffin tins or pan with Pam or other cooking spray.
*Fill each tin 1/2 full of sausage or spread sausage evenly in pan.
*Add whipping cream to beaten eggs and stir well.
*Pour egg mixture over sausage to almost full
*Sprinkle cheese
*Bake 20 minutes until done.
* Remove from tin or cut into squares and refrigerate

Great Second Meeting
June 23, 2008 2:53 am
We had a great meeting for those of you who could not join us.   We did a taste test of Profect which is a protein drink with no carbs.   I believe it was 25 grams of protein for 150 calories.   The feedback we got from it was pretty good.

The next meeting is July 29th because we cannot get the bank on the third Tuesday.   everyone pretty much decided it was more important to know where to find us and change the date.   Good news is that we are back on for the third Tuesday of the month for August and September!

Great News this week:

Chris has her Lap Band on Tuesday (6/24)
Sheena has been approved and is scheduled for Lap Band on July 22

That means two new banders to join our ranks before the next meeting!   Congratulations to you both!   Let us know if there is anything you need!

I will be posting new recipes for high protein, low carb foods over through this blog.   Please let me know if you have a favorite low carb receipe that you would like to share!
