Pureed/Soft Recipes

While digging for the recipe for Olivia, I found these recipes for pureed and soft foods that some of you newbies may want to try: CAPPUCCINO CUSTARD (I think I'll make this tonight.....) (Leave out the coffee for vanilla custard) 4 eggs, beaten Pinch of salt 2 1/2 cups milk (replace 1/4 cup of the milk with 1/4 cup sugar free chocolate sauce or syrup for a mocha!) 1/2 cup Splenda granular 1/2 teaspoon vanilla 2 tablespoons instant coffee granules (use decaf crystals if you prefer) 1/8 teaspoon cinnamon Preheat oven to 325 degrees. Place six 4-ounce custard cups into a 9x13 inch baking pan. Whisk together the eggs, salt, milk, Splenda, vanilla, coffee granules, and cinnamon. Pour, through a sieve, into the custard cups. Fill baking pan with 1 inch of hottest tap water. Bake for 25-40 minutes or until set on the edges but still slightly jiggly in the center. (A sharp knife should come out clean when inserted into the middle and nothing should ooze from the cut when pressed.) Remove custards from water bath and allow to cool on a wire rack. Cover with plastic wrap and chill. Makes six servings. Per Serving: 115 Cal; 9 g Protein; 5 g Tot Fat; 4 g Carb; 1 g Fiber; 1 g Sugar; 81 mg Sodium

Pumpkin Pie Ricotta 1/4 c canned pumpkin 1/4 c ricotta cheese 2 tbsp vanilla protein powder 2 pkgs splenda 1/4 tsp pumpkin pie spice Mix all together until smooth and dig in! Yummy! Cream Cheese Spread 8 ounces low fat cream cheese 1 tablespoon worcestershire sauce garlic, chopped, or garlic powder to taste 3 or 4 finely chopped green onions 1/2 teaspoon Season-All salt Mix thoroughly, refrigerate for a couple of hours to allow flavors to marry.  Then, spread on deli meat. I cut each slice of meat in half, roll each half up. 

Hot Cocoa (13 grams protein) 1 tablespoon Splenda 1 tablespoon unsweetened cocoa 2 tablespoons dried milk powder 8 ounces non-fat milk Dash salt Few drops good quality vanilla Blend Splenda, unsweetened cocoa, dried milk powder and salt in large mug. Blend in milk, stirring until dissolved. Microwave 1 minute on high or until hot. Can also heat in saucepan on stove.

ooh...those sound yummy!

I have printed the recipes for when I get to that point on the 27th.  ;)

Today I am just happy to be off of the clear liquid phase and actually have something that fills me up for a while.  Whoda ever thunk that yogurt is sooooooo good?      ;)

I am very happy to hear that you are doing so well!  Good for you! I also posted a "Pumpkin Fluff" to Martha a couple days back that you might enjoy. It will only get better from here, and Yes, I remember how good the first "solid" food was!!!!! Have a great weekend!
