I am really far behind today, and this may be tomorrow's too, depending on how long the test takes.....
Beef with Asian Mushroom Sauce
You could add zucchini or broccoli to this and it would also be great with pork or chicken.
4 ounces sliced mushrooms
4 pounds beef tip roast ( I used chuck )
1/4 cup Hoisin Sauce ( See recipe at bottom )
2 cloves garlic, minced
1/2 teaspoon salt
1/4 cup beef broth
corn starch
6 tablespoons sliced scallions
Put the mushrooms in your slow cooker and place the beef on top. Spread the Hoisin Sauce over the beef, scatter the garlic and salt over it, and pour the broth around it. Cover the slow cooker, set it to low and let it cook for 9 hours.
When the time's up, remove the beef from the slow cooker and put it on a platter. Add corn starch to thicken up the sauce a bit and then pour the sauce into a sauce boat. Slice the beef and serve it with the sauce, topped with the scallions.

Hoisin Sauce Recipe:
4 tablespoons soy sauce
2 tablespoons natural peanut butter
2 tablespoons splenda
2 teaspoons white vinegar
1 clove garlic
2 teaspoons dark sesame oil
1/8 teaspoon Chinese five spice powder
Just assemble everything in a blender (or bullet) and blend till its smooth. Store it in a tightly lidded jar in the fridge.

Makes roughly 1/3 cup, or 6 1 tablespoon servings
