Cottage Cheese Pancakes

 

1 c. cottage cheese

2 eggs

¼ c. flour

 

Mix all together in small bowl.  Rest for an hour, or overnight in the fridge.

Spray nonstick griddle.

Spoon batter on griddle and fry until bubble on the surface of the pancake remain open, and bottom side is a nice golden brown.

Flip and coo****il other side is also golden brown.

 

Serve these with Splenda, SF syrup and sliced fruit if you choose. 4 servings;  each seving, without topping:

I make these all the time and I use whole wheat pancake mix. Never heard about letting it sit..will have to try this....they are soooooo good!
