R.O.D.-Faux "Loaded" Potato Casserole

This is a great side dish whether you are doing low carb or not........ Faux "Loaded" Potato Casserole

 

 

Full head of fresh cauliflower, broken into florets with stems chopped into small pieces      (or a 16 oz. bag of frozen) 2 tablespoons butter 4 oz. light cream cheese

 

5 strips of crisp turkey bacon (finely chopped) 8 oz. shredded cheese, your choice (ex. sharp cheddar) 2 tablespoons scallions - optional Microwave cauliflower w/2 tbsp. water for 10-15 minutes until VERY soft - drain and mash with hand potato masher (or puree if preferred) in an oven safe dish with butter and cream cheese and mix well. Add shredded cheese and scallions (if using).

 

Bake at 350 for 20 minutes until brown and bubbly.

Dawn, I can't wait to try this one. I have had mashed cauliflower made liked mashed potatoes and like it that way, but this sounds even better! Paulette
